Nutty Rhubarb Muffins

Ingredients
3/4 cup paced brown sugar
1/3 cup vegetable oil
1 tsp vanilla
1/2 tsp salt
1 cup diced rhubarb
1/2 cup buttermilk
1 egg beaten
2 cups flour
1/2 tsp baking soda
1/2 cup chopped nuts
Topping
1/4 cup packed brown sugar
1/4 cup chopped nuts
1/2 tsp ground cinnamon

Procedure
In a small mixing bowl, combine brown sugar, buttermilk, oil, egg, and vanilla. mix well
Set aside In a medium mixing bowl, combine flour, baking soda and salt. Add egg mixture; stir just until combined. Spoon the batter into 12 greased muffin cups.

Mix together toppping ingredients; sprinkle over tops of muffins. Bake at 375 degrees for 20 minutes or until muffins test done. Yield 1 dozen


Rhubarb / Cherry Cobbler

Ingredients
Filling
3 cups chopped Rhubarb
1 can (21 ounce) Cherry Pie Filing
1 cup Sugar
4 Tbsp Butter or Margarine
Crust
1/2 cup shortening
1 cup Sugar
1 Egg
1 cup all–purpose Flour
1 tsp baking powder
1/2 cup milk

Procedure
Spread fruit in a 13x9x2 baking dish. Sprinkle with sugar and dot with butter. For crust, cream shortening and sugar in a mixing bowl. Add Egg and beat well. Combine flour and baking powder; add alternately with milk to creamed mixture. Pour over fruit, bake 350 degree for 50 to 60 minutes. Yield about 12 servings.


Rhubarb Jelly

Ingredients
4 cups of diced Rhubarb
3 cups sugar
1 cup crushed pineapple
3 oz pkg strawberry gelatin

Procedure
Boil Rhubarb, sugar and pineapple together for 15 minutes. Remove from heat and stir in gelatin. Freeze or refrigerate


Rhubarb-Custard

Ingredients
3 eggs- beat well
2 cups sugar
1 Tbsp soft butter
1 cup milk
3/4 tsp nutmeg
5 Tbsp. flour
4 cups Rhubarb

Procedure
Combine eggs, milk. In separate container combine sugar, flour, rhubarb, nutmeg. Pour liquid mixture over dry ingredients. Pour into greased or buttered custard cups. Bake 375 degrees for 45 minutes, turn down to 325 degrees last 15 minutes.


Strawberry Rhubarb Pie

Ingredients
Blend Together
2 cups cut rhubarb
1/4 teaspoon salt
2 cups sliced strawberries
1/3 cup flour
1 1/4 cups sugar
2 Tbsp butter

Procedure
Bake as a two-crust pie at 450 degree for 10 minutes
and 30 minutes at 375 degree.


Strawberry Rhubarb Pie, Diabetic

Ingredients
2 cup Rhubarb diced
1/2 cup Fruit Spread, Strawberry
1/2 cup Grape Juice
1 cup sliced Rhubarb
2 Tbs Cornstarch
2 Pie Crust
1 Tsp ground Cinnamon
1/4 cup strawberry fruit spread
1/4 tsp ground Nutmeg
1 Egg Yoke
1/4 tsp salt
1 Tbs Sour Cream
1 pint sliced Strawberries

Procedure
Rhubarb can be fresh or frozen. Use fresh strawberries, stand 10 minutes
Preheat oven to 450 degree, Combine Rhubarb and Grape Juice in medium saucepan.
Bring to boil over medium heat. Reduce heat to low, simmer, uncovered, until Rhubarb is tender, 8-10 minutes for fresh or 5 minutes for frozen; drain.

Combine cornstarch, cinnamon, nutmeg and salt in medium bowl; mix well. Add strawberries toss to coat. Stir in cooked Rhubarb and fruit spread, Stir in uncooked Rhubarb.

Roll out 1 piecrust to 11” circle and line 9” pie plate with it. Trim pastry and flute edges, sealing to edge of pie plate. Fill shell with fruit mixture and dot with fruit spread. Roll out remaining pastry to 10” Circle. Cut into ˝ “ strips. Form into lattice design over fruit.
Combine eggs yokes and sour cream until well blended. Brush over pastry. Bake 10 minutes.

Reduce oven to 350 degree Continue baking 30 minutes, until pastry is golden brown and filling is hot and bubbly. Pie may be covered loosely with foil during the 30 minutes of baking to prevent overbrowing.

Cool on wire rack. Serve warm or at room temperature.


The Best Rhubarb Cake

Ingredients
1 cup Oleo or Butter
2 cup Flour
2 tbs. Sugar

blend and bake for 10- 15 minutes in a 9x 13 baking dish at 350 degrees
6 Eggs yoke
1 cup half & halfor Sour Cream
4 Tbs Flour
2-2 1/2 cup sugar
5-6 cups diced Rhubarb

Mix well together. Pour over crust and bake at 350 degree for 40 to 55 minutes or until set

Procedure
Beat 6 eggs whites until stiff, adding 12 Tbs sugar (3/4 cups) Add 2 Tbs at a time, add 2 tsp vanilla. Spread on Rhubarb mixture; sprinkle with coconut (optional) and bake in oven 350 degree for 8 to 10 minutes. Or until delicately browned.
